Super Simple Pancakes

I found a pretty standard pancake recipe online and the best part is it's so simple even I can do it. You need this stuff:

  • 1 3/4 cup milk
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 2 cups self-raising flour (300 grams)
  • 1/3 cup caster sugar (80 grams)
  • Margarine or butter for cooking with

When following most recipes you need to cut/measure/prepare all the ingredients in the right weights and copped-ness before you can start but this is so easy you can skip all that rubbish. You can do it all using nothing but a big mixing bowl and a single measuring cup. Here is what I do:

  1. Get all your ingredients in their buckets/containers/shells
  2. Get a big mixing bowl, this is where everything will go
  3. Measure out the milk in your measuring cup and pour it in your big bowl
  4. Add in the eggs, and the vanilla essence (I just use a splash)
  5. whisk the crap out of the stuff in the big bowl until its nice and frothy
  6. Give your measuring cup a rinse under the tap and dry it off with a towel
  7. Now measure out 1/3 cup caster sugar and pour it in slowly while you stir your mixture
  8. Measure out the flour and sprinkle it in while you stir

Some things I have found: Everyone says medium heat but we like ours pretty thin and crispy so I use a pretty hot pan (220 degrees according to our induction cook top thing)

Keep any unused mixture in the fridge and it should be fine for a day or two. I find the second day it tastes really good.
